Sweet & Sour Chicken Salad

Picture is property of Simply Recipes.

You’re probably no stranger to this type of chicken salad but I was first introduced to it by my aunt. She lived right across the street from me when I was younger. Me and my siblings would go over for dinner and breakfast, because this woman could cook! She shuffled this salad up fast and smoothly. Me and my older brother fell in love. The next day we forced my mom to try and replicate it, slowly but surely she perfected it to match my aunt’s recipe. Ever since then we haven’t been able to stop making it.

Your in for a treat with this salad. If you’re looking for an easy but fresh chicken salad; then this is the one for you. Including fresh cut, sweet red apples, tangy grapes, and not to forgot the crunchy bite from the celery and red peppers.
With out further a do let’s get cooking crazed chefs…

Prep Time: 10 mins Cook Time: 15-20 mins

Yields: 4 Servings

Ingredients:
Cooked Chicken(Boneless Chicken Breasts)- 3 Cups
Celery- ½ Cup
Red Bell Pepper- 2 Tablespoons
Grapes- 1 ½ Cups
Red Onion- ¼ Cup
Red Apple (Sweet)- 1 ½ Cups
Iceberg Lettuce- 1 ¾ Cups
Mayonnaise- 5-6 Tablespoons
Sour Cream- 1 Tablespoon
Lemon Juice- 2 Teaspoons
Salt & Pepper- to taste
Water- 6-8 Cups

Step by Step Instructions
1. Take a medium pot with your water (with four pinches of salt) and bring it to a rolling boil.

2. Place your chicken into the pot, whole or cut into smaller pieces if desired. And let cook for about 15 minutes.
*Keep an eye on your chicken Do Not let over cook.

3. While your chicken is cooking we can get started on prepping our fruits and veggies.

4. Were going to cut our celery stalks quarterly and then in half. We want small pieces to distribute the crunch evenly. And we’ll do the same with our apple and grapes.(Set Aside)

5. For the red onion and red bell pepper we want to cut those into a small dice.(Set Aside)

6. For the iceberg lettuce you want to finely and roughly chop it, so that it can evenly distribute throughout the salad.

7. After your chicken is fully cooked remove from water and place into bowl and let cool. Once cool cut quarterly as well. (Large dice)

8. Once all salad ingredients are ready toss them together with the chicken in a large bowl.

9. Next mix together your mayo, sour cream, and lemon juice in a separate smaller bowl. Add salt and pepper to taste. Were looking for a good balance of sweetness and acidity.

10. Once your sauce is ready pour into your whole salad mixture and combine until everything has a full coverage.
*Let cool for 2 hours before enjoying.
